A successful strategy to reduce the chronic state of oxidative stress and inflammation could be the adoption of a healthy diet, enriched with food and beverages with well-known antioxidant and anti-inflammatory compounds. Coffee, one of the most common beverages in the world, is a very complex mixture of more than one thousand bioactive compounds, which play a key role in human health, thanks to their antioxidant and anti-inflammatory activities. In this chapter, the most important results obtained from human studies evaluating the effects of coffee consumption on the main biomarkers of oxidative stress and inflammation will be presented and discussed.
